  • This story is not about a company itself; it revolves around the recipe that inspired this project. 500 years ago, amidst persecution, our family left Navarra, Spain, for the American Indies seeking freedom. Settling in Colombias Antioquia valleys, they adapted their ancestral recipe with local spices. Today, the Ochoa family recipe lives on in DELAO, a brand rooted in tradition, blending the flavors of the past with the present. Today, we can savor this recipe, which motivates us to offer more. As a result, we bring you five recipes that blend our present with special and exotic fruits, just like those that flourish in Colombia. Description

  • Our coffee is carefully selected from the coffee regions of Colombia. We offer the finest coffee varieties, distinguished by our special processing methods. Origin: We work along side with coffee farmers which have been in the produce of the bean for more than 3 generations. Plantation: Finca El Imperial has belonged to the Isaza (Lerner now days) family since 1972 when Jorge acquired this land that was part of Hacienda Namay (Cundinamarca region), a well-known coffee farm. From 1988, during the national coffee crisis, sow pitaya, which helped the soil for the coffee unique taste, until 2004 when coffee became once more the main character of our landscape. Cultivation: Periodically we fertilize our crops according to the soil and foliar analysis, therefore we guaranty the correct treatment to each of our plants as a unit, instead of a crop as a whole. At the same time, we clean the coffee crop to control the pests and thus allow the correct absorption of nutrients. Harvest Season: Main crop: March– July - Sept– Dec; Fly Crop: Dec– Feb - March - July Social Impact: We make fair trade with our providers buying direct at their location, meeting them directly and their land produces, at a fair prices. Helping to create and sustain jobs. Environmental: Water safe processes, natural pesticides are used from hot peppers, natural composting(organic fertilizer) procedure. Characteristics: Honey procedure: This is our branded speciality procedure, which consist in letting the bean dry with the pulp of the fruit, which makes the bean absorb more of the fruit fructose, making it sweeter. (Also environmental helpful for the less use of water) Roast: Medium Low, which helps keep in the flavor of the coffee the flavors absorb in the fermentation with the pulp.
